Immobilization technology has attracted much attention as an emerging technology, which can potentially be adopted industrial production. In this study, immobilized Lactobacillus pentosus was prepared by chitosan film-coated sodium alginate-polyvinyl alcohol in a batch fermentation reactor. An optimal fermentation condition was determined with the aid of a six-factors by Box-Behnken design. And the error of the highest lactic acid yield and production rate were -0.5% and -0.2%. Furthermore, a kinetic model was also applied to predict the fructose consumption, lactic acid production, and cell growth with high correlation coefficients of 0.9955, 0.9932, and 0.9869.
