ESF Celebrates the Sweetness of Maple Syrup Season

SYRACUSE, N.Y. – March 25, 2025 – Learn how maple syrup gets from the tree to your pancakes, and then take some syrup home during Maple Weekend at SUNY ESF’s Heiberg Memorial Forest March 29 and 30.

Maple syrup will be on sale at the sugarhouse from 9 a.m. to 3 p.m. March 29th. People are encouraged to bring pint and quart canning jars to reduce the use of plastic. Jars will be filled for $10 a pint and $20 a quart. Bottled syrup will also be available for purchase. A portion of syrup sales benefits student scholarships. 

“The warm days and cool nights we’ve had this spring have been great to get the sap running, so we’ll have plenty of syrup on hand,”  said Jill Rahn, ESF forest resource analyst who coordinates Maple Weekend.

Saturday features sugarhouse tours where you can learn how syrup is made and interactive environmental education and stewardship activities presented by environmental studies students. All ages are welcome to attend.

A pancake breakfast rounds out the weekend on Sunday. The breakfast, from 8-11 a.m., will be served by ESF’s Forestry Club. The Timbersports team will demonstrate sawing and chopping techniques used in competitions.

The all-you-can-eat breakfast is $10 for adults, $8 for children 5-12 and seniors, and children under 5 eat free. There are no sugarhouse/sugarbush tours on Sunday. Maple syrup will be on sale in the sugarhouse on both days – cash or check only.

Heiberg Memorial Forest is located at 7393 Maple Ridge Road, Tully, and is a member of the New York State Maple Producers Association.
